Visit our taproom for a rotating selection of 14 beers brewed on-site in a historic church, the former Butler Memorial Presbyterian church in Youngstown’s old Smokey Hollow neighborhood.  We work diligently to bring you a wide selection of unique and fresh small-batch beers, focusing on traditional lagers & barrel-aged wild ales with open and mixed culture fermentation. We come from a background of crafters and creators, and seek to always bring you creativity and craftsmanship in every glass. We believe in both quality and history, aiming to always be educating our customers on the story behind beer both in our own brewhouse and throughout time.

Our flagship American Lager! Brewed for the working class of Youngstown, this light, clean, and crisp lager is perfect for any drinker, season, or occasion, but is especially rewarding after a hard day’s work.

Our English-style ESB. It’s an easy drinking beer with a full body and a crackery malt finish. We used the finest Maris Otter malt from England that we could find, along with EKG hops that come exclusively from England. Spicy, floral and earthy aromatics from the hops compliment this extremely balanced and malty brew.

This light and crisp Italian Pilsner is crafted especially for Youngstown, in homage to it’s deep Italian roots and cuisine. We hope this pairs perfectly with any Italian home cooking or offerings from any of the fine local restaurants and take out spots that we are lucky to have in the Valley.

build a trail 5%

Build A Trail Pale Ale is a wet hopped coolship pale ale brewed with 100% local malt and hops! Malt from Yarian Quality Malts and hops from Youngstown’s north side. A percent of all sales go back to the trail coalition, who is a mountain bike club building dual-use trails.

auroch 10%

A barrel aged Baltic Porter aged in a maple whiskey barrel and refermented on cacoa nibs and tahitian vanilla beans. Finished by bottle and keg conditioning on local Ohio maple syrup.

iguana eyes 7.5%

Our sneaky little West Coast IPA, named in the aztec ruins in Mexico & having an eye for spotting sneaky iguanas lurking in the shadows. A clear, golden amber IPA with big tropical and dank hop notes and moderate bitterness.

Petrushka 10%

Our Petrushka Russian Imperial Stout is bold, rich, and roasty with notes of strong coffee and dark chocolate.

Earth & aether 5.5%

Earth & Aether is a beer we’ve been wanting to release since before we opened our doors. This style of beer is the inspiration for all of our wild ales we’ve had to date and one of the main reasons we decided to start Noble Creature Wild ales and Lagers. Brewing in the Lambic tradition has always been fascinating for us and is one of the last remaining styles in the modernized craft beer world that still retains a bit of mystique and romanticism. Truly a flavor of local flora and terroir in the valley here, Earth and Aether is brewed true to Lambic tradition using a grist of local Pilsner malt from @yarian_quality_malts and unmalted wheat. We start with that extremely simple grist and by using the traditional turbid mash we aim to produce a highly dextrinous and complex wort for our local flora to work on over the years. We then send it to the kettle and throw in a large dose of local hops from the Northside that have been aged in our cellar for years, and boil it down for an extended time before it goes into our coolship to naturally cool in the winter air. Once it’s at fermentation temperature, we send the wort directly to oak barrels to ferment and age. This geueze-inspired ale is the culmination of the past three winter season when we finally got this spontaneous project off the ground. The final blend consists of a smaller portion of 2 and 3 year beer to build in some acidity and complexity and rounded out by last years young spontaneous ale for a fresh dose of funk and hops. We then bottle conditioned this for months before releasing it to our great friends here in Youngstown this Saturday for our 5 year anniversary. This has truly been a passion project for us and we couldn’t be happier with the way our first blend turned out. We did everything in our power to adhere to Lambic and Gueuze tradition in our little cellar here in Youngstown Ohio and can’t wait to share it! Cheers friends! A 24-month Oud Bruin inspired wild ale. This year’s blend, after an extended rest in barrels, gave us incredible natural fruit notes and beautiful layers of complex flavors. Thus we chose not to add any of the fruit that was featured in the first rendition, and instead let this batch speak for itself.

This malt forward and extensively aged sour brown ale boasts notes of caramelized dates, ripe cherries, worn leather, and pipe tobacco. It’s brightness and acidity is balanced by a splash of the sweet flavors of oak, vanilla, coconut and nutmeg pulled from the barrel.

Overall, it’s a wonderful winter wild ale with warming alcohol and decadent, warm, comforting flavors & aromas. Perfect for sharing around a living room fire during a heavy snow.

quintet cuvée

“Quintet Cuvée is a collaborative anniversary beer created with Noble Creature Cask House in celebration of our 5th year anniversaries, both happening this month. This complex, golden ale features a blend of 5 of our favorite saisons and wild ales varying in age and fermentation vessels, including foeder, stainless, coolship, and oak barrels.

Notes of ripe pineapple and tropical fruit shine through this beer, while a light citrus acidity balances honey and vanilla sweetness. Winter spice dances with a little funk as a hint of oak pokes through a lovely dry finish.”

We love the spirit of this beer and what is represents. Not just a business collaboration, but the joy in celebrating and uplifting one another in friendship. Home is our foeder-aged solera style flemish red ale. This beer is aged in the large format oak barrel (Foeder) in the taproom, formerly a Sangiovese barrel that we imported from Italy. It is now home to our solera project, which means we pull off a portion of the barrel to package when it’s ready, leaving the other portion, and then topping up with the same base red ale. Therefore, it is usually a blend of old and young beer becoming one in the barrel. The last release was packaged un-blended as it was the first run but this years is very special to us because the first batch went in before we even opened the taproom, meaning this batch is a blend of a 2-year and 5-year beer and all things seemed to come into balance. A fun project we will continue to do and we’re truly happy to share it, from our home to yours.

Cheers, Creatures! We are happy to announce that we are moving into our second year of memberships. There are some changes to the structure, but the mission remains the same:

Since Christmas time 2017, we’ve loved sharing our craft with Youngstown, and seeing how our customers respond to certain beers and styles. It has been so rewarding to see our community grow into it’s craft beer culture with us. We have been thrilled with the interest Youngstown has shown in learning, tasting, and experiencing more about beer and the brewing and aging processes that make beer so special. With each year we have been able to build a new brewhouse, add more tanks, expand our barrel program, begin our coolship, spontaneous, and open fermented collection, and cultivate our house cultures. Now, we are making a point to carve out time for doing things that we have always felt a personal pull to create. We continue to make strides towards producing more local and sustainable beers, whether it be through our own foraging and gardening or sourcing more from local vendors and farmers. Unfortunately some setbacks to working hyper local are that we can’t provide these beers on any real scale. So, along with expanding our cellar and brewhouse capacity, we also decided that it would be appropriate for us to downsize a select few of our tanks so that we can really make the best use of some of the local products we can get our hands on. Not only do local ingredients play a role, but creating beers on this scale also gives us complete freedom to make beer that just do not make sense on a wider scale, but that we believe are worth making and sharing. This allows us to push our creativity, ingredients, and processes to the limits, which will lead to producing some unique and sustainable ales and lagers.  Additionally, it also lets us interact more directly with the wonderful people that make Youngstown so special through sharing super small batch beers with you and creating connections with you through member events and time in the taproom.

With that, we are ready to open sales up to 50 people that would like to join us this calendar year in receiving member exclusive specialty beers and enjoying taproom discounts and perks.

Mill Creek Park Partnership

Whatever it is, the way you tell your story online can make all the difference.

 We are proud to announce a new series of beers crafted in partnership with the Mill Creek MetroParks Foundation! If you know us, then you know that we love our lagers at the Creature. We also love hops, of course. In an effort to more seamlessly combine the two, we began working on an experimental series in this fusion style. You might have even tasted the “Experimental IPA” that we had on tap in the taproom. Maybe you’ve seen the term “Cold IPA” floating around in the beer world lately, and now you’ll see a lot more of it here in our small corner of the beer world.  We decided to stick to this name for our new-styled beer series, though we feel it’s a bit of a misnomer, and here’s why: We are aiming to take our favorite characteristics of lager fermentation and combine it with all of the beautiful and versatile hop characters of a new school IPA to create a beer that throws out huge hop aromatics and flavor but finishes super clean and crisp, like our beloved pilsners. We have spent a lot of time experimenting in order to structure a recipe entirely around a different set of processes and ingredients, rather than simple overly hopping a lager in the style of an IPL. However, because it is technically a lager, it doesn’t necessarily fit into a typical Indie Pale Ale category either. Thus, Cold IPA is the most encompassing style name to indicate that this is, in short, a blend of the two styles. The entire series will incorporate these new techniques, each with their own set of hops and unique ABVs, that are inspired by various parts, locations, or structures found in Mill Creek Metroparks.

Our inspiration from Mill Creek Park is one that anyone who is from the greater Youngstown area can understand. Although we ourselves have lived in Youngstown for over a decade and have always frequented the park, we have experienced the park in an entirely new way with our daughter, and that has caused us to develop an even deeper appreciation for it. This park is truly a relief and a refuge, which was especially true during the height of COVID. It’s meant a lot to have this beautiful and peaceful place to retreat to. We started trekking the park on hike and bike trails with the stroller, and over the past two years have been working on hiking every trail in the park. It is truly an amazing resource that we have here in Youngstown, and we want to help showcase to the community that it is something that we should all utilize, cherish, and respect. This series was inspired by the intention to do all that we can to help preserve and maintain this wonderful place right here in Youngstown that has come to mean So much to us. Therefore, this entire new series of Cold IPAs is dedicated to Mill Creek Park, and a percentage of all sales will be donated to the Mill Creek MetroPark Foundation. Our hope is that this series can be an ongoing donation that they can count on in order to keep doing the great and much needed work that they do for our parks.

We hope Youngstown enjoys this first release, and that all folks can feel as though they are in some way a part of helping to sustain, promote, and further educate us all through the incredible resource we are so lucky to have in Youngstown, Ohio. Cheers to Mill Creek MetroParks!

Parapet Cold IPA

We hereby introduce the first beer in the series: “Parapet”. The Parapet bridge is at the entrance of the park greeting those who enter from the North Side of Youngstown, and has always been our personal gateway into the park. Therefore, we found it fitting for it to also be our entrance into this series. Parapet is a bottom fermented double dry hopped lager loaded with Citra, Simcoe, and Mosaic hops. A simple grist of quality pilsner malt and rice lays a crisp and clean foundation for the hops to shine. It’s designed to be a smooth, dry lager with notes of honey and hay, and it is subtle enough to showcase those wild hop aromatics. You can expect notes of Meyer lemons, pineapple, blueberry, toasted coconuts and fresh spruce tips.

Lily Pond Cold IPA Light

Lily Pond is similar in style to Parapet and yet beautifully unique, just like the various locations in the park. It has aromatics of fresh citrus, pine, and bergamot with flavor notes of fresh herbal tea & jasmine flowers with a dry, crispy clean finish. Overall, it drinks as a well balanced hoppy light lager.

Our goal for this batch was a beer that was light and super crushable after a hike in the park on a warm day, that was still exciting to drink. In keeping with this series, the grist was Pilsner malt and rice with our favorite blend of Hersbrucker and Callista hops on the hot side and fermented with a blend of lager yeast and enzymes to produce a light, gluten reduced lager dry hopped with Chinook, El Dorado, and Callista. We’re happy to be revisiting this style in a light version, and excited for what else is to come in this series!
